Recipe: Broccoli, Sugarsnap and Carrot Salad in Lime Dressing

Recipe: Broccoli, Sugarsnap and Carrot Salad in Lime Dressing

This makes a great big bowl of salad and because the ingredients are quite robust they don’t get soggy and so you can make it ahead for barbeques and entertaining.

    Fresh Ingredients
  • 1 head broccoli
  • 3 carrots
  • 1 bag sugarsnap peas
  • 1 lime
    Store Cupboard Ingredients
  • sherry vinegar
  • olive oil
  • salt and pepper
  • maple syrup
  • sesame seeds
    Equipment
  • mixing bowl
  • chopping board
  • knife
  • box grater
  • microplane or zester
  • lemon juicer
  • glass jar with lid
  1. Chop up sugar snaps into pieces about half a centimetre thick. Place in mixing bowl
  2. Chop up broccoli heads into thin slivers. Place in mixing bowl
  3. Grate carrots using grater side of box grater. Place in mixing bowl
  4. Zest lime straight into mixing bowl with other ingredients using microplane
  5. Clear up the chopping mess you will have made
  6. Juice the lime and put it in your glass jar
  7. Add the same amount of sherry vinegar to the jar as lime juice
  8. Add the same amount of oil to the jar as the lime and vinegar together
  9. Add a few turns of salt and pepper to your taste
  10. Add a squirt of maple syrup to take the edge off the citrus
  11. Put the lid on the jar and give it a good shake
  12. Taste it and keep adding a bit more maple syrup if it is still too sharp
  13. Give the jar one last shake and pour all over the salad and mix well
  14. Transfer to serving dish and scatter with some sesame seeds
