Caesar Salad with Anchovies and Poached Egg

Caesar Salad with Anchovies and Poached Egg

Gluten free and dairy free. The anchovies are salty but offset by the creamy poached egg yolk and Caesar dressing. Also works well with added grilled chicken or halloumi. **You do have to be prepared and soak the cashews overnight beforehand**

    Fresh Ingredients
  • 2 romaine lettuces
  • 4 eggs
    Store Cupboard Ingredients
  • 50 g raw cashews
  • 2 tspns sweet white miso
  • 1 tspn Dijon mustard
  • 1 tbspn lemon juice
  • 1 tbspn capers
  • Jar anchovies
    Equipment
  • Scales
  • Cup
  • Chopping Board
  • Knife
  • Sieve or Salad Spinner
  • High powered blender
  • Mixing bowl
  • Saucepan
  • Slotted spoon
  1. The night before, measure out 50g of cashews into a cup and cover with water. Leave to soak overnight.
  2. Chop the lettuce into 1.5 cm slices so you get ribbons and wash. Leave to drain or spin in a salad spinner.
  3. Add boiling water to a saucepan and put it on the hob ready to poach the egg.
  4. To make the dressing, pour the water off the cashews and put in your blender with the 2 teaspoons of white miso, 1 level teaspoon of Dijon mustard, 1 tablespoon of lemon juice, 1 tablespoon of capers and season with salt and pepper. Add in 4-5 tablespoons of water and blend on high until creamy. Taste and adjust seasoning as necessary.
  5. Pour the dressing into a mixing bowl and add the lettuce on the top and stir through well.
  6. Divide the lettuce in between four serving plates or bowls and top with 5-6 anchovies per person.
  7. Break an egg into a cup, stir the boiling water so it swirls around and gently pour the whole egg into the water so as not to break the yolk. It will be cooked quickly in less than a minute so carefully remove with the slotted spoon and place onto the top of a salad. (You can microwave poach an egg by putting a knob of butter into a cup and breaking in the egg. Microwave for 30-45 seconds depending on the power of your microwave.) Repeat with the other eggs and serve.
  8. If you just want this for two people use one romaine lettuce and two eggs. You can save half of the dressing in a jar in the fridge for a few days.
